In 2011, the Husband and I are going go meat-free on Mondays, inspired by the John Hopkins-inspired movement. Here, I'll be tracing what our meatless eats are. Hopefully this will give you some meatless ideas!
1/3: Black bean burgers and sweet potatoe fried
1/10: Green peppers stuffed with quinoa, sauteed red peppers, and mexican spices
1/17: Calzone: store bought pizza dough wrapped around sauteed peppers, onion, mushrooms, sundried tomatoes, marinara, and parm
1/24: Bean burrito from Taco Bell - rough day
1/31: Black enchiladas: Mix 1 can of black beans, drained with 1 small can of green chiles, 1 can of drained corn, and 1 packet taco seasoning. Heat mixture, roll inside wheat tortillas, cover with can of El Pato tomato sauce and shredded cheese. Put in over until cheese is melty
2/7: Veggie chilli
2/14: Had meatless Tuesday instead on 2/15: homemade veggie soup
2/21: Cheese quesadillas
2/28: Skipped this week, @ Disney
